In Lima, the kitchens you travel to taste open bookings weeks in advance and fill up the same day. It is not a detail of the trip: it is the trip.
We take care of that. You decide whether a table is worth getting up early for.
The best fish you will eat in Honduras is ordered standing up, on the shore, and has no menu.

Eating where the fish is caught
On the coast the fish reaches the table the same day. At Lake Yojoa you stop on the shore and order it fried, with plantain chips. In Comayagua there is a workshop where chocolate is made by hand.
None of those three things is in a guidebook. We have eaten all three ourselves.

The hotel decides what time you have dinner
An all-inclusive feeds you at seven. A small hotel in the centre lets you go out at ten, which is when the good places open. There is no right answer: there is the one that suits you.
That is why you will not see a price on this page. The trip is quoted once we know what it is.
A market at nine in the morning explains a country better than a museum at four in the afternoon.
